Festive Carrot Cake

1 1/2 c oil
2 c sugar
2 t cinnamon
2 t vanilla
1 tsp salt
4 eggs
2 1/4 c flour
2 t soda
8 oz can crushed pineapple
2 c coconut
2 c shredded carrots
1 c nuts

Icing:
6 oz cream cheese
2 1/2 c powdered sugar
1/2 c soft butter

Combine oil, sugar, cinnamon, vanilla, salt; blend well.  Add flour, soda and pineapple.

With large spoon fold in carrots, coconut and nuts; blend well

Bake at 350 degrees for about 1 hour

Mix all icing ingredients and beat well
Spread on cooled cake
