2 lb chicken breast
1 med onion
1 can Ro-Tel tomatoes and green chilies
3 t minced garlic
1 tsp oregano
1 T oil
2 t ground cumin
1 tsp cayenne
3 c chicken broth
3 c shredded jack/cheddar cheese
16 oz sour cream
2 cans white nothern beans
Boil and shred chicken breast.
Saute onion, Ro-Tel, garlic, oregano, oil, cumin and cayenne; put this mixture, chicken, chicken broth and beans in pot and simmer for 1 hour.
Add sour cream and cheese; then heat throroughly
